WHere is a home-style interpretation of a beverage from a new menu. It's a party-sized premix which is loaded full of flavours associated with holiday season, rendering it excellent for a festive gathering. Reserve the remaining citrus syrup for brunch beverages, sweets, or for more rounds of this cocktail.

Serves 10 guests
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Cocktail (yields 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Put the listed ingredients in a saucepan, bring to a light boil, agitating so the sugar melts. After that, take off the burner allowing it to reach room temperature fully. Pour to a sterilised bottle, cap it and store in the refrigerator, where it will keep for up to four weeks.
Preparing the Cocktail Base: Mix every spirits and syrup in a big jug, let it rest for 60 minutes, then strain best through cheesecloth, to ensure it's completely strained.
When ready to serve: Pour 85ml from the premix to a cocktail shaker packed with ice, and agitate lightly for one minute until cold. Filter to a cold coupe glass or a similar vessel, top with the cranberries and complete it with a brief mist of mandarin oil over the drink.
